Christmas dinner on a stick.
If you live in the southern hemisphere (like me) and will be having a hot Christmas, perhaps this idea might fit in with your plans better than a major roast dinner. These kebabs are ideal for the BBQ or cooking on a griddle pan.
Stuffing is my favourite part of Christmas dinner, and I love how it imparts its flavour into these meatballs as it cooks. I used Paxo stuffing from a packet – as that is the way I cheat to make stuffing most of the time – but you could use home made stuffing if you prefer.
Serve these with the traditional vegetables, or go lighter with a green salad. Gravy is optional!
